Thriving in the busy season – Why we love the rush

It has been a busy, busy week — which is exactly how we love it. People often tell me, “You’re always so busy!” And I always reply: not busy enough.

When the calendar is full and the kitchen is buzzing, my team thrives. We move faster, we laugh more, the energy is electric. There’s nothing quite like the rhythm of a busy kitchen — pans clattering, ovens humming, timers beeping — all of it working together to create something delicious for someone’s moment that matters.

Our kitchen is complex by nature — we do so many types of service and every day looks different. This week alone:

  • A traveling executive from GE Healthcare — meals at his hotel, workplace, and multiple venues
  • Three meals a day for a local recovery center, all week long
  • Full catered meals for Marquette University and the Medical College of Wisconsin
  • Food supporting Milwaukee Jewish Federation and Bader Philanthropy at the Milwaukee Youth Arts Center
  • A school group visiting from Chicago — delivered to camp in Hartland
  • Food for the dedication of the Harry & Rose Samson Jewish Community Center
  • A Bar Mitzvah celebration this weekend
  • And desserts for a concert at CBINT on Sunday

Food goes out coldhot & sealeddouble-wrapped for kosher reheating, with disposables or without — there are so many versions. On Wednesday alone, we had eight deliveries — and five left at the same time!

It’s a whirlwind behind the scenes — entering orders quickly, confirming times, double-checking addresses, labeling packaging correctly — thousands of tiny details that must line up perfectly. Chaotic? Absolutely. But the vibe? Joyful and high-powered.

We also love the connection this work brings:

  • Travelers craving comfort
  • Community partners hosting meaningful moments
  • Other chefs tasting our food and cheering us on (the best compliment!)

In food and events, busy is good. Busy means community is gathering. Busy means celebrations are happening. Busy means we get to do what we love.

And while we’re juggling all of this, we’re also dreaming up what’s next — new holiday menus, new sample menus, new creative ideas. We can’t wait to unveil more of what we’ve been cooking up (literally).

We’re especially excited about an upcoming Hanukkah party with a NYC deli theme… and working with caviar for the first time! That’s the fun of this industry — every week brings something new.

So yes — we’re working fast, drinking lots of coffee, entering orders between sips, and I’ll sleep eventually. But there’s no place we’d rather be.
